Super Rich Autumn Spice Hot Chocolate
I told my brother I made spiced hot chocolate and he asked, concerned, “What kind of spice did you put in it?” because someone left sriracha out on the counter next to the stove and I laughed for ages!
This recipe is meant to be super rich, chocolate-y, with strong spices that make you cough. A little goes a long way, so serving sizes vary based on preference. This recipe can be diluted with milk or water on a 1:1 ratio. I enjoy strong flavors, so I drink this as is - but only in a small espresso cup because it’s too rich for a full 8 ounce serving.

2 cups almond milk*
1 cup water
1 cup chocolate chips
3 tablespoons cocoa powder
2 tablespoons cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground cloves
pinch of salt
*any type of milk is fine. May also add more water rather than milk.
Tip: For less sweet flavor, use bittersweet chocolate chips and special dark cocoa powder.

1.5 cups water
1.5 cup chocolate chips
5 tablespoons cocoa powder
4 tablespoons cinnamon
1 teaspoon vanilla extract
2 teaspoons ground nutmeg
2-3 teaspoons ground ginger
